Ingredients

  • 1 pork loin weighing 1 and ½ kg
  • 1 tablespoon vinegar
  • 1 medium onion, chopped
  • 1 clove of garlic
  • 1 glass of dry white wine
  • 1 bay leaf
  • Black pepper to taste
  • Salt to taste
  • Oil or lard

Ingredients Farofa

  • Cassava flour
  • Butter or margarine
  • Green smell
  • Salt to taste

Preparation Mode

  1. In a pestle, crush the garlic, salt, bay leaf, pepper and onion well.
  2. Remove, place in a small bowl and add the wine and vinegar.
  3. Mix well.
  4. Wash the loin and rub it well with the prepared seasoning.
  5. Leave it to macerate overnight, turning it from time to time.
  6. Place the loin in a baking dish greased with oil or lard.
  7. Brush it with oil and bake in a moderate oven until the meat is tender.
  8. Once ready, cut into slices and arrange on a serving dish.

How to Prepare Farofa

  1. Melt the butter or margarine.
  2. Add the flour and, stirring constantly, let it toast lightly.
  3. Season with salt, remove and add the parsley.

Mom’s Tips

While the loin is in the oven, baste it with the seasoning and the sauce that forms in the baking dish.

Serve the sauce separately, in a gravy boat, and accompany the loin with rice, farofa and leaf salad.

If you prefer, you can add olives and chopped boiled eggs to the farofa.
