Ingredients

  • kg of pumpkin cut into cubes
  • 4 cups (tea) of vegetable broth
  • 1 cup (tea) of milk
  • 1 small onion, chopped
  • 2 cloves of minced garlic
  • 2 tablespoons of olive oil
  • Chopped green onions to taste

Preparation Mode

  1. Heat the olive oil in a pan and brown the onion and garlic.
  2. Add the pumpkin and sauté for 2 minutes.
  3. Gradually add the vegetable stock and cook until the pumpkin is soft.
  4. Remove and let cool.
  5. Place in a blender and blend until creamy.
  6. Return the cream to the pan, add the milk and cook over medium heat for about 10 minutes.

You can use Japanese pumpkin or squash to make this dish.
