
The pumpkin jam in calda is one of the traditional sweets of our beautiful country that is Brazil. Appreciated all year round and especially at June parties, you should have a prominent place in your recipe collection.
Ingredients
- 2 kg of peeled pumpkin, seedless and cut into small cubes
- 1 kg of sugar
- 1 tablespoon of virgin lime
- 4 Cloves
- 1 cinnamon chopstick
Preparation mode
- In a basin with (5 liters capacity) place the already chopped pumpkin.
- Put water leaving almost the full basin and pumpkin completely covered.
- Add the lime and mix well.
- Leave at rest for more than 4 hours.
- After that time, in a large pan, melt the sugar until you get a golden caramel.
- Remove from heat and carefully not to burn and gradually add water, cinnamon and blackheads. Bring to a boil until you get a thin syrup.
- Drain the pumpkin and wash tightly in running water until you verify that you have removed any and all trace of lime.
Put the pumpkin to cook in the sugar syrup.
- When the pumpkin is cooked the sugar syrup will be a little or thicker.
- Let it cool completely and transfer to a refractory or a composition.

Approximate yield of 8 portions.
The secret for the candy to be soft inside and, with a delicious crispy cone on the outside, is in the virgin lime.
