Depending on the ingredient used, there are two options for dried meat croquettes, but both are very tasty!
Ingredients Dough
- 2 and ½ cups (tea) of wheat flour
- 2 cups (tea) of milk
- ½ cup (tea) of oil
- 2 cubes of beef broth
- Ice water
- Breadcrumbs for coating
Ingredients Filling
- 1 and ½ cups (tea) of desalted, cooked and shredded dried meat
- ½ cup (tea) of Catupiry® type cream cheese
- 1 tablespoon of butter
- 2 tablespoons of parsley
- 1 chopped onion
Dough Preparation Method
- In a pan, place the milk, oil and meat broth.
- Place over medium heat and bring to a boil.
- Pour in the flour all at once, stirring vigorously until it comes away from the bottom of the pan.
- Place in a baking dish and let cool.
Preparation Method Filling
- In a pan, melt the butter and sauté the onion for 3 minutes.
- Add the meat and sauté for another 3 minutes.
- Remove from heat, add the green chives, cream cheese and mix well.
Assembling the Croquettes
- Open a small portion of dough in the palm of your hand.
- Add a little filling and shape the croquette.
- Dip in ice water, coat in breadcrumbs and fry in hot oil until golden.
- Remove and drain on paper towels.
