Ingredients

  • 200 grams of cornstarch biscuits
  • 5 tablespoons of butter
  • 250 grams of ricotta
  • 1 and ½ cup (tea) sugar
  • 2 cups of milk (tea)
  • 2 and ½ envelopes of colorless, flavorless powdered gelatin
  • 1 cup (tea) cream
  • Mint leaves (optional)

Syrup Ingredients

  • 300 grams of strawberries or raspberries
  • 1 tablespoon of lemon juice
  • 4 tablespoons icing sugar

Preparation Mode

  1. Preheat the oven to 180ºC.
  2. In a blender, grind the cookies well.
  3. Place in a bowl, add the butter and mix well until you obtain a dough.
  4. With the dough, line the bottom and sides of a 26 cm diameter springform pan.
  5. Using your fingertips, press the dough firmly into the pan and bake for approximately 8 minutes.
  6. Dissolve the gelatin according to the package instructions.
  7. In a blender, beat the ricotta and milk.
  8. Add the sugar and continue beating.
  9. Add the cream and dissolved gelatin.
  10. Pour into the dough and refrigerate for at least 4 hours.

Syrup Preparation Method

  1. In a blender, blend the fruit with the sugar until puree.
  2. Sift, add the lemon and mix.

Assembly

  1. Remove the pie from the refrigerator.
  2. Distribute the syrup over the pie.
  3. Decorate with mint leaves.

Melt the butter to make the dough.

You can finish the edge of the pie with whipped cream. If you prefer, you can also decorate with cherries and blackberries.
