Caramelized Pineapple

Ingredients

  • 1 pineapple cut into slices
  • 2 cups of sugar (tea)
  • 4 tablespoons of water
  • 1 glass of orange broth or rum

Preparation mode

  1. In a pan, add the water, orange broth, sugar and let it cook until it starts to form a caramel.
  2. Add the pineapple slices, leave for 4 minutes, turning occasionally.
  3. Retire e reserve.

Ribs

Ingredients

  • 900 grams of pork ribs in pieces
  • 1 and ½ cup (tea) of water
  • 1 tablespoon of cachaça
  • 3 crushed garlic cloves
  • 1 tablespoon chopped fresh rosemary
  • Juice and zest of 1 lemon
  • Salt to taste
  • Black pepper to taste

Preparation Mode

  1. Preheat the oven to 200°C.
  2. Place a large pan with water over medium heat and bring to a boil.
  3. Add the pork ribs, cachaça and cook for 15 minutes over high heat.
  4. Remove the ribs, season with the garlic, half the rosemary, lemon juice and zest, salt and pepper to taste.
  5. Transfer to a baking tray and bake for 30 to 40 minutes or until they are almost golden.
  6. Add the caramelized pineapple and leave it in the oven for a few more minutes so that the ribs are completely golden.

Mom Tips

Approximate yield of 4 servings.

If you prefer, you can also add medium potatoes cut into quarters and seasoned with salt, pepper and rosemary so that they cook and brown along with the ribs.
