An easy main dish to make is roast chicken in pieces. Well seasoned, it’s delicious!

Ingredients

  • 1 medium sized chicken cut into pieces
  • ½ cup (tea) of oil
  • ½ cup (tea) of butter or margarine
  • 1 crushed garlic clove
  • 1 small onion, finely chopped
  • 2 tablespoons lemon juice
  • ½ teaspoon ground ginger
  • ½ teaspoon paprika
  • 2 teaspoons sugar
  • Salt to taste
  • Butter for greasing

Preparation Mode

  1. Grease a baking dish with butter.
  2. Arrange the chicken pieces in the baking dish, skin side down.
  3. Separately, heat a pan with the butter, oil, garlic clove, onion, ginger, paprika, sugar, lemon juice and salt.
  4. Let it cook until the butter is melted.
  5. Brush the butter mixture over the chicken pieces.
  6. Bake at 170ºC and every 15 minutes turn the chicken pieces and baste them again with the butter mixture.
  7. Roast until larger pieces are tender (approximately 45 minutes).

Mom’s Tips

The amount of onion = ¼ cup (tea)

Side dish = white rice.

Yields approximately 4 servings.
