With special sauce, orange baked duck is a very good choice as a main course; Try it!

Ingredients

  • 1 1.5 kg duck
  • 2 tablespoons of butter or margarine
  • Bark of a stained and boiled orange
  • 1 and ½ cup of orange juice
  • ½ cup of brandy
  • 1 tablespoon of sugar
  • 5 tablespoons vinegar
  • Salt to taste
  • Kingdom pepper to taste
  • Orange buds to decorate

Preparation mode

  1. Season the duck with salt, pepper and grease it well with butter or margarine.
  2. Place the duck preferably on a clay dish and bake in the medium oven.
  3. While baking, from time to time, moisten it with hot water to prevent it from drying out.
  4. After 30 minutes, remove the sauce that formed, go through a sieve and set aside.
  5. Wet the duck, always in the oven, with the mixture of half a glass of orange juice and half a cup of brandy mixed.
  6. In a pan, put the vinegar, the sugar and bring to the heat until a clear caramel.
  7. Add the remaining glass of orange juice and also the chopped and boiled peel.
  8. Let it cook over medium heat for 15 minutes.
  9. Strain in a sieve and add the reserved sauce.
  10. Season with salt and pepper to taste.
  11. Until this phase, the duck will have baked for 45 minutes.

Mother Tips

Place the baked duck on a large platter and decorate with orange buds.
Serve the sauce aside, very hot, in a jetty preferably heated
