Tasty and juicy, the loin can be enjoyed at any time of year. Check out this recipe with cassava!
Ingredients
- 1 piece loin
- 500 grams of cassava pieces
- 1 chopped onion
- 2 cloves of garlic, chopped
- 1 cube of vegetable broth
- Juice of 3 oranges
- ½ cup (tea) olive oil
- Black pepper to taste
- Salt to taste
Preparation Mode
- In a blender, blend the onion, garlic, vegetable broth, orange juice, half the olive oil, pepper and salt.
- Place the loin in an ovenproof dish, cover with the seasoning mix and leave to soak for at least 4 hours in the refrigerator.
- Preheat the oven to medium temperature.
- Remove, reserve the liquid and place the loin in a large roasting pan.
- Drizzle with the remaining olive oil.
- Cover with aluminum foil and bake for 1 hour.
- Remove the paper, place the cassava around the meat and return to the oven for another 40 minutes or until roasted and golden.
- Transfer to a refractory and set aside.
- Place the reserved seasoning liquid in a pan, place over medium heat and cook until reduced and thickened.
- Baste the meat and cassava.
- Decorate to taste and serve.
Mom Tips
The piece of loin should weigh approximately 1 kg.
Orange juice (acidic medium) helps soften the loin fibers.
If you don’t like cassava, replace it with potatoes.
