Ingredients

  • 1 piece of matambre weighing 1.5 kg
  • 150 grams of diced bacon
  • 1 slice of chopped pepperoni sausage
  • ½ chopped seedless red pepper
  • 1 chopped onion
  • 1 chopped carrot
  • 3 tablespoons of butter
  • 2 cups of cassava flour
  • Chopped green flavor to taste
  • Black pepper to taste
  • Salt to taste

Preparation Mode

  1. Season the meat with salt and pepper. Book.
  2. Preheat the oven to medium temperature.
  3. In a pan, over medium heat, fry the bacon in its own fat until it starts to brown.
  4. Add the sausage and fry for 3 minutes.
  5. Add the butter and sauté the onion, pepper and carrot for 3 minutes.
  6. Pour in flour, pepper, salt and mix.
  7. Remove from heat, add the green scent and mix.
  8. Spread the farofa over the meat and roll it up like a roulade.
  9. Tie with string or secure with toothpicks.
  10. Place in a mold and cover with aluminum foil.
  11. Bake for 1 hour and 15 minutes.
  12. Remove the paper and bake for another 30 minutes or until golden.
  13. Serve sliced.

Approximate yield of 8 servings.

When using aluminum foil, always use the shiny side facing the food.
