Ingredients
- 1 piece of matambre weighing 1.5 kg
- 150 grams of diced bacon
- 1 slice of chopped pepperoni sausage
- ½ chopped seedless red pepper
- 1 chopped onion
- 1 chopped carrot
- 3 tablespoons of butter
- 2 cups of cassava flour
- Chopped green flavor to taste
- Black pepper to taste
- Salt to taste
Preparation Mode
- Season the meat with salt and pepper. Book.
- Preheat the oven to medium temperature.
- In a pan, over medium heat, fry the bacon in its own fat until it starts to brown.
- Add the sausage and fry for 3 minutes.
- Add the butter and sauté the onion, pepper and carrot for 3 minutes.
- Pour in flour, pepper, salt and mix.
- Remove from heat, add the green scent and mix.
- Spread the farofa over the meat and roll it up like a roulade.
- Tie with string or secure with toothpicks.
- Place in a mold and cover with aluminum foil.
- Bake for 1 hour and 15 minutes.
- Remove the paper and bake for another 30 minutes or until golden.
- Serve sliced.
