Ingredients

  • 4 kg of ham
  • 1 liter of dry white wine
  • 1 cup (tea) of soy sauce
  • ½ cup (tea) of mustard
  • ½ cup (tea) of honey
  • 1 cup (tea) of chopped green smell
  • 15 cloves of garlic
  • 2 bacon broth cubes
  • 1 onion
  • 2 bay leaves
  • 1 pinch of ground cloves
  • ½ teaspoon ground cinnamon
  • Black pepper to taste
  • Salt to taste

Preparation Mode

  1. Using a knife, carefully make holes all over the leg. Set aside.
  2. In a blender, beat the wine, mustard, bacon cubes, onion, garlic, bay leaf, chives, pepper, cloves, cinnamon and salt.
  3. With this mixture, water the entire leg, making sure the seasoning gets into the holes.
  4. Let it rest for 24 hours in the refrigerator, turning it over occasionally.
  5. The next day, preheat the oven.
  6. Mix the soy sauce with the honey and set aside.
  7. Remove the leg from the refrigerator and place it in a baking dish along with the seasonings.
  8. Cover with aluminum foil and bake in a low oven for 3 hours and 30 minutes.
  9. Remove the paper and brush the leg with the soy sauce mixed with honey.
  10. Bake in a medium oven for approximately 50 minutes, brushing with this mixture every 10 minutes.

Mom’s Tips

Decorate as desired, serve with farofa and lemon slices.
