Ingredients
- 2 eggplants cut in half
- 1 medium onion chopped
- 2 crushed garlic cloves
- 2 tablespoons of oil
- 250 grams of ground beef
- 1 ripe tomato
- 1 chopped red pepper
- 1 tablespoon of green scent
- Black pepper to taste
- Salt to taste
- Coarsely grated mozzarella cheese
- Oil
Preparation Mode
- Preheat the oven to 180ºC.
- Cut the eggplant lengthwise.
- With a knife, make superficial cuts in the pulp.
- Place in a pan, drizzle with olive oil and bake for 10 minutes.
- Let it cool and remove the pulp with a spoon, forming a canoe. Book.
- Saute the garlic and onion until wilted, in a frying pan with a little oil.
- Add the ground beef, green chilli, tomato, paprika and sauté until the meat is cooked.
- Add the eggplant pulp, season with pepper, salt and mix well.
- Stuff each half of the eggplants and sprinkle with cheese on top.
- Bake for 15 minutes or until the cheese melts.
- Serve hot.

Approximate yield of 6 servings.
You can vary the filling by replacing the meat with chicken or even tuna.
