The British chef, Thom Bateman shared on his TikTok account a simple trickwhich turns roast beef into child’s play.
Thom Bateman begins with a fundamental step: the trimming of meat. The culinary expert recommends making incisions in the fat of the roast beef. Form a grid with the tip of the knife. This allows the fat to render evenly during cooking. Next, the chef advises generously salting the roast beef just before cooking it. Now let’s move on to the actual cooking. Heat a large skillet over medium-high heat and place your roast beef in it, fat side first. The idea is to gently melt the fat so that it is nicely browned. Once this step is complete, turn the meat over to sear all sides. Afterwards, the influencer recommends placing the meat on a rack with a dish underneath to catch the cooking juices. The latter is then placed in a cold oven with rotating heat. Unlike many methods that require a preheated oven, starting with a cold oven allows for smoother, even cooking. When the roast beef reaches 190°C in the oven, you can take it out and let sit for 30 to 40 minutes at room temperature. When it reaches 51°C inside, your roast beef is ready to be enjoyed.
To support this, various alternatives are possible. Oven roasted potatoes, lightly browned and crispy, are a must. Green or seasonal vegetables go very well with meat, as do simple mashed potatoes. You can also eat roast beef with gratin dauphinois and a little salad.
