Traditional Swiss recipe already highly appreciated by Brazilians. Crispy and delicious!
Ingredients
- 2 potatoes
- 1 cup thin smoked sausage
- 2 tablespoons finely chopped onion
- 2 tablespoons oil or butter
- White pepper to taste
- Nutmeg to taste
- Salt to taste
Preparation Mode
- Pass the sausage in boiling water for approximately 30 seconds to remove excess fat.
- Drain and chop into small pieces.
- Peel the potatoes, wash them and grate them on the coarse side of the grater.
- Dry/squeeze the grated potato in a clean kitchen towel.
- In a non-stick frying pan, over medium heat, add the oil and sauté the onion.
- Add the sausage and sauté some more for 2 minutes.
- Distribute the potato over the top and throughout the pan.
- Squeeze/press with the help of a spatula or slotted spoon.
- Season with pepper, nutmeg and salt.
- Don’t stir. Do not cover the frying pan.
- Fry for approximately 8 minutes or until golden underneath.
- Serve immediately garnished with green scent.
Mom Tips
The sausage is optional; you can make pure Rösti.
If you prefer to brown both sides of the Rösti, you can use a pancake maker for the procedure.
Suggestions for fillings for Rösti: Ham, smoked ricotta, olives, vegetables, low-fat/skim cheese.
Yield: Consider 1 potato per person/individual portions.
