A classic dessert, much appreciated and also a best seller. Check out the possible variations of this delicious dessert!

Ingredients

  • 600 grams of ready-made puff pastry
  • 250 ml fresh cream
  • 400 grams of chopped strawberries
  • Powdered sugar

Cream Ingredients

  • 375 ml of milk
  • 4 excited
  • 60 grams of crystal sugar
  • 3 tablespoons of sifted wheat flour
  • 2 tablespoons dark rum
  • 250 ml fresh cream

Cream preparation method

  1. Heat the milk over medium heat until it starts to boil. Remove from the fire.
  2. Beat the egg yolks with the crystal sugar until thick.
  3. Mix with flour.
  4. Add the milk to the mixture little by little, until you get a cream.
  5. Place in a pan, bring to a boil, stirring until it thickens.
  6. Reduce heat to low and beat with a whisk for 2 minutes.
  7. If lumps form, remove from heat and blend until smooth.
  8. Let it cool, add the rum and mix.
  9. Refrigerate for 1 hour covered with plastic wrap.
  10. After this time, beat the fresh cream until it reaches a stiff peak.
  11. Mix the whipped cream into the cream with chilled rum.

Dough Preparation Method

  1. Preheat the oven to 200ºC.
  2. Provide a baking tray and splash ice water on it.
  3. Roll out the puff pastry into a rectangle larger than the baking tray, about 3mm thick.
  4. Roll the dough onto the rolling pin and roll it out onto the baking sheet, leaving the edges out.
  5. Press the dough and refrigerate for 15 minutes.
  6. Prick the dough with a fork, cover with baking paper and place a wire rack on top.
  7. Bake for approximately 20 minutes, until it starts to brown.
  8. Holding the wire rack and paper, turn the dough onto the baking sheet.
  9. Bake for 10 minutes until golden.
  10. Remove from the oven and slide the dough onto a cutting board.
  11. While still hot, trim the edges and cut the dough into three parts. Let cool.

Assembly

  1. Cover a piece of dough with the cream mixture and scatter the chopped strawberries on top.
  2. Add another layer of dough and cover with cream and fruit.
  3. Place the third layer on top, pressing down a little.
  4. Decorate with strawberries.
  5. Sprinkle everything with icing sugar.

There are countless possible variations of this dessert, both in the shape of the dough and in the filling.

It can be made in a large format to be placed in the center of a buffet or it can be made in individual portions.

Traditional filling is whipped cream. There is also cream like the one taught above, with pastry cream, chocolate cream, dulce de leche, ganache, etc.

Fruits: it can be just strawberries, with various red fruits or another fruit of your choice.
