Expect your family to rave about this turkey when you serve it at your holiday gatherings.

Ingredients

  • 1 clean turkey (± 4kg) and without giblets
  • Black pepper to taste
  • Salt to taste
  • 500 grams of Brussels sprouts
  • 3 cups (tea) of broccoli florets
  • 2 cups (tea) of snow peas
  • 2 cups (tea) of peeled mini onions
  • 1 cup (tea) of whole mushrooms
  • 2 cups (tea) of softened butter
  • 4 crushed garlic cloves
  • 1 tablespoon chopped rosemary
  • ½ cup (tea) of chopped thyme
  • ½ cup (tea) of chopped basil
  • ½ cup (tea) of chopped chives

Preparation Mode

  1. Preheat the oven to medium temperature.
  2. Season the turkey, inside and out, with salt and pepper.
  3. Mix the butter with the garlic, rosemary, thyme, basil and chives to form a paste.
  4. Rub this paste all over the turkey, including under the skin.
  5. Place the turkey in a large roasting pan, cover with foil and bake for 2 hours.
  6. Prepare the Brussels Sprouts as described in Mom’s Tips below the recipe. Set aside.
  7. Remove the foil from the turkey and return to the oven for another 1 hour.
  8. Baste constantly until baked and golden.
  9. Add the broccoli, peas, baby onions and mushrooms around the turkey.
  10. Baste again and continue baking for approximately 30 more minutes.
  11. Transfer to a serving dish, add the reserved Brussels sprouts and serve.

Mom’s Tips

To sauté Brussels sprouts: In boiling salted water, add the cleaned Brussels sprouts. Boil them for 5 to 10 minutes, whole or cut in half. In a frying pan, sauté them for 3 to 5 minutes in a tablespoon of butter, 1 clove of minced garlic and salt to taste. If necessary, you can increase the amount of butter a little.

Yield of ready turkey is approximately 8 servings.
