Ingredients
- 3 cups (tea) of peeled, cubed potatoes
- 1 and ½ cup (tea) of peeled carrots, cubed
- 1 and ½ cup (tea) of sliced green beans
- 2 cups (tea) of mayonnaise
- 1 can of drained peas
- 4 chopped boiled eggs
- Chopped green onions to taste
- Black pepper to taste
- Salt to taste
Preparation Mode
- Place a large pot of salted water over high heat.
- Let it boil.
- Add the carrot and cook for 5 minutes.
- Add the potato and cook for another 5 minutes.
- Finally, add the green beans and let cook until all the vegetables are cooked al dente.
- Remove, drain and rinse under running water to stop the cooking process.
- Place in a salad bowl, add the eggs, mayonnaise, peas, pepper, chives and salt.
- Mix gently.
- If you prefer, decorate with parsley sprigs and olives.
- Refrigerate.
- Serve.
Mom’s Tips
If you prefer, add other vegetables of your choice.
Freezing is not recommended.
