Don’t waste time! This vegetarian recipe will please even non-vegetarians. Delicious!
Ingredients Dough
- 2 cups (tea) of wheat flour
- ¾ cup (tea) of chopped cold butter
- 2 tablespoons of ice water
- 1 pinch of salt
Ingredients Filling
- Zucchini slices
- 1 small onion, chopped
- ½ red bell pepper, seeded and thinly sliced
- 2 tablespoons chopped mint
- 1 teaspoon salt
- ½ cup (tea) of cream
- 1 cup (tea) of grated mozzarella cheese
- 4 eggs
Preparation Mode
- Get a 24 cm diameter pan.
- Preheat the oven to medium temperature.
- In a bowl, mix the flour and butter until it resembles crumbs.
- Add water, salt and mix until smooth.
- Form the dough into a ball, wrap it in plastic wrap and refrigerate for 30 minutes.
- Remove and with the help of a rolling pin; open the dough.
- Line the pan with the dough and then prick it with a fork.
- Bake for 15 minutes or until golden brown.
- In another bowl, mix the onion, bell pepper, mint, mozzarella and salt.
- Spread over the dough.
- Distribute the zucchini on top.
- Beat the eggs, add the cream, season with salt and place over the filling.
- Place back in the oven for approximately 10 minutes or until golden brown.
- Serve.
Mom’s Tips
It is not recommended to replace butter with margarine.
If you prefer, instead of slicing the zucchini, you can grate it coarsely until you have 3 cups of grated zucchini.
You can also add yellow pepper.
