Don’t waste time! This vegetarian recipe will please even non-vegetarians. Delicious!

Ingredients Dough

  • 2 cups (tea) of wheat flour
  • ¾ cup (tea) of chopped cold butter
  • 2 tablespoons of ice water
  • 1 pinch of salt

Ingredients Filling

  • Zucchini slices
  • 1 small onion, chopped
  • ½ red bell pepper, seeded and thinly sliced
  • 2 tablespoons chopped mint
  • 1 teaspoon salt
  • ½ cup (tea) of cream
  • 1 cup (tea) of grated mozzarella cheese
  • 4 eggs

Preparation Mode

  1. Get a 24 cm diameter pan.
  2. Preheat the oven to medium temperature.
  3. In a bowl, mix the flour and butter until it resembles crumbs.
  4. Add water, salt and mix until smooth.
  5. Form the dough into a ball, wrap it in plastic wrap and refrigerate for 30 minutes.
  6. Remove and with the help of a rolling pin; open the dough.
  7. Line the pan with the dough and then prick it with a fork.
  8. Bake for 15 minutes or until golden brown.
  9. In another bowl, mix the onion, bell pepper, mint, mozzarella and salt.
  10. Spread over the dough.
  11. Distribute the zucchini on top.
  12. Beat the eggs, add the cream, season with salt and place over the filling.
  13. Place back in the oven for approximately 10 minutes or until golden brown.
  14. Serve.

Mom’s Tips

It is not recommended to replace butter with margarine.

If you prefer, instead of slicing the zucchini, you can grate it coarsely until you have 3 cups of grated zucchini.

You can also add yellow pepper.
