There are other versions of Viennese Pie, but this is our favorite. Delicious!

Dough Ingredients

  • 2 cups (tea) of wheat flour
  • 1 cup cold butter
  • 1 pinch of salt
  • 1 tablespoon of sugar
  • 2 eggs

Filling Ingredients

  • 1 kg of apples
  • 100 grams of seedless raisins
  • 1 cup (tea) sugar
  • 2 tablespoons of rum
  • 1 teaspoon of cinnamon powder
  • 1 and ½ tablespoon of melted butter
  • 5 maria cookies
  • 1 beaten egg yolk

Preparation Mode

  1. On the table, place the flour and make a well in the center.
  2. Add the eggs, sugar and salt there.
  3. Mix everything with your fingertips, forming a very fine crumb.
  4. Add the butter little by little and work the dough until it is homogeneous.
  5. Form into a ball and let it rest in a cool place for 1 hour.

Stuffing Preparation

  1. Peel the apples, remove the seeds and cut into thin slices.
  2. Place in a bowl and add the raisins.
  3. Sprinkle sugar and cinnamon on top.
  4. Add the rum and let it macerate.

Assembling the Pie

  1. Grease and flour a rectangular or round pan.
  2. Preheat the oven.
  3. Roll out 2/3 of the dough to a thickness of 4 mm.
  4. Line the pan with it, without trimming the excess dough that comes out and falls from the sides of the pan.
  5. Cover the bottom of the pan with maria biscuits.
  6. Arrange the macerated fruits on them and cover everything with melted butter.
  7. Roll out the rest of the dough.
  8. Brush the entire edge of the pie with the egg yolk and place the remaining dough on top.
  9. Join the edges of the dough by shaping and decorating the pie to your liking.
  10. You can also choose to join the edges together by using a rolling pin and, at the same time, cutting off the excess.
  11. Brush the rest of the egg yolk onto the top of the dough and make small holes with the tip of a sharp knife.
  12. Place in the hot oven for approximately 1 hour.
  13. Remove and sprinkle sugar over the top of the pie.

Mom Tips

Serve the pie warm or cold, as a dessert or with tea.
