While the zucchini season has been in full swing for several weeks, these delicious vegetables are now in the spotlight in our gardens and on market stalls. To enhance them, Nadia Paprikas, one of our culinary experts, has imagined a recipe that is both light and delicious. Indeed, for 750gshe chose to rework them in the form of a flan. And to add a sunny note to this preparation, the culinary expert incorporated feta. An ingredient that perfectly complements the sweet and fresh taste of zucchini.

  1. Preheat your oven to 200°C.
  2. Clean the zucchini and cut them into small cubes then blanch them in a large volume of water.
  3. Line your cake mold (if it is not silicone) with buttered parchment paper.
  4. In a salad bowl, beat the eggs with the cream and milk. Season with salt, pepper and turmeric.
  5. Add the cubed feta.
  6. Add the well-drained zucchini.
  7. Place your mold in a large baking dish half-filled with boiling water, to cook in a bain-marie in the oven.
  8. Bake for 30 to 35 minutes, stick a knife in the center of the flan to check cooking, the blade should come out barely damp.
  9. Leave to cool then unmold.

For even more deliciousness, you can accompany it with a tomato coulis. If you don’t have turmeric, you can replace it with grated parmesan to add flavor to the dough. The flan will keep for up to 3 days in the refrigerator.
