Ingredients Dough

  • 1 kg of wheat flour
  • ½ tablespoon of sugar
  • 15 grams of dry biological yeast
  • ½ cup (tea) of olive oil
  • 3 cups (tea) of warm water
  • 1 teaspoon salt
  • 2 eggs

Ingredients Filling

  • 2 zucchini, thinly sliced
  • Olive oil to taste
  • 1 teaspoon of minced garlic, fried and well dried
  • Chopped red dried pepper
  • Salt to taste
  • Oregano, sage and thyme to taste
  • 2 cups (tea) coarsely grated mozzarella cheese

Dough Preparation Method

  1. Preheat the oven to 200ºC.
  2. Mix the flour, sugar and yeast.
  3. Add the remaining ingredients and mix well until the dough forms.
  4. Knead well.
  5. Form balls with the dough and let it rise.
  6. On a smooth, floured surface, roll out the dough into circles.
  7. Fill by first adding a little mozzarella and then the seasoned zucchini.
  8. Place in a greased and floured pan.
  9. Brush the calzones with olive oil
  10. Bake for approximately 30 minutes or until lightly golden.

Preparation Method Filling

  1. Grease a frying pan with olive oil and heat it.
  2. Add the zucchini and grill until golden brown.
  3. Place in a bowl and season with salt, pepper, garlic and other seasonings.
  4. Mix gently so as not to break up the zucchini.

Mom’s Tips

If you prefer, replace half of the traditional wheat flour with the whole wheat version.

With the same dough you can make pizza and savory rolls.

In the filling, you can mix regular mozzarella with buffalo mozzarella.
