Sriracha sauce has been threatened by shortage for several years now. This year 2024 is no exception to the rule. Once again, the main American manufacturer of Sriracha sauce, Huy Fong Food, recently sent a letter to consumers explaining the difficulties it was encountering.

The problem ? The jalapeño peppers he usually uses are still “too green to continue production as it affects the color of the product”. A phenomenon linked to the great drought wave which has been affecting Mexico for some time. Because of these climatic conditions, jalapeño peppers struggle to ripen properly. The situation is not likely to improve because production will not resume before the next harvest which should only take place next September.

While waiting for a return to normal, it is possible to make your own Sriracha sauce yourself. This will also allow you to obtain a 100% natural condiment, because industrial recipes often contain additives.

It was on his Instagram account that food content creator @lerizjaune shared his advice for making his own Sriracha sauce. You will see that there is nothing very complicated.

To make 430g of sauce, you will need:

  • 500 g Moroccan red peppers
  • 100 g d’ail
  • White vinegar
  • a tablespoon of salt
  • 140 g of sugar
  1. Start by washing the peppers before cutting them into large slices and putting them in a saucepan.
  2. Peel the garlic cloves and add them to the pan.
  3. Pour the white vinegar into it to match the ingredients. Bring everything to a boil and cook for 10 minutes.
  4. Transfer the chili pepper and garlic to a blender.
  5. Add 6 tablespoons of cooking vinegar.
  6. Mix everything to obtain a smooth and homogeneous preparation. Strain the sauce. Add the sugar and mix over low heat for 3 minutes.
  7. Taste the sauce and adjust the seasoning with sugar and salt if necessary.

Let it cool and it’s ready!

To keep it for as long as possible, store it in an airtight container in the refrigerator. You can use it for a month.
