Dough Ingredients
- 250 grams of sifted wheat flour

- 4 eggs

Butter Cream Ingredients

- 1 cup roasted and ground almonds
- 1 packet of vanile sugar
- 2 whites
Syrup Ingredients
- 100 grams of sugar
- 2 tablespoons of instant coffee
- ½ glass of water
- 2 tablespoons of rum
Dough Preparation Method
- Grease a 20 cm round pan with butter. Reserve.
- In a bain-marie, beat the eggs with the sugar.
- Remove from heat and blend until completely cool and double in volume.
- Add the flour, mix and pour into the mold.
- Bake in a low oven for approximately 20 minutes.
- Unmold and let cool on a wire rack.
Syrup Preparation Method
- In a pan, heat all the ingredients.
- Let it boil, without stirring, for 5 minutes.
Cream preparation method
- In a pan, heat the sugar with a little water, forming a bullet point syrup.
- Using a mixer, beat the egg whites and pour the syrup over them in a stream until it reaches a very firm consistency.
- Add the softened butter, vanile sugar and part of the coffee syrup, mixing little by little until you get the desired color.
Cake Assembly
- Cut the sponge cake into two discs and moisten them with the remaining coffee syrup.
- On one of the discs, spread a layer of butter cream using a wet spatula.
- Sprinkle the almonds.
- Place the other cake disc on top.
- Cover with another layer of buttercream.
- Using a piping tip, decorate the cake with melted chocolate.
- Decorate the side of the cake with almond shavings.
