Dough Ingredients

  • 250 grams of sifted wheat flour
  • 250 grams of sugar
  • 4 eggs
  • 1 level tablespoon of butter for greasing

Butter Cream Ingredients

  • 250 grams of fresh butter, softened
  • 150 grams of sugar
  • 1 cup roasted and ground almonds
  • 1 packet of vanile sugar
  • 2 whites

Syrup Ingredients

  • 100 grams of sugar
  • 2 tablespoons of instant coffee
  • ½ glass of water
  • 2 tablespoons of rum

Dough Preparation Method

  1. Grease a 20 cm round pan with butter. Reserve.
  2. In a bain-marie, beat the eggs with the sugar.
  3. Remove from heat and blend until completely cool and double in volume.
  4. Add the flour, mix and pour into the mold.
  5. Bake in a low oven for approximately 20 minutes.
  6. Unmold and let cool on a wire rack.

Syrup Preparation Method

  1. In a pan, heat all the ingredients.
  2. Let it boil, without stirring, for 5 minutes.

Cream preparation method

  1. In a pan, heat the sugar with a little water, forming a bullet point syrup.
  2. Using a mixer, beat the egg whites and pour the syrup over them in a stream until it reaches a very firm consistency.
  3. Add the softened butter, vanile sugar and part of the coffee syrup, mixing little by little until you get the desired color.

Cake Assembly

  1. Cut the sponge cake into two discs and moisten them with the remaining coffee syrup.
  2. On one of the discs, spread a layer of butter cream using a wet spatula.
  3. Sprinkle the almonds.
  4. Place the other cake disc on top.
  5. Cover with another layer of buttercream.
  6. Using a piping tip, decorate the cake with melted chocolate.
  7. Decorate the side of the cake with almond shavings.
