Ingredients
- 4 whole finger peppers (without stems)
- 2 cups of orange broth
- 900 grams of crystal sugar
- 200 ml corn glucose
- 750 ml of water
Preparation Mode
- In a blender, blend the peppers with the orange broth.
- Without straining, pour into a large, preferably thick pan.
- Add the other ingredients and mix well.
- Bring to a simmer, stirring occasionally, until you obtain a thick syrup.
- Remove the foam that forms on the jelly with a slotted spoon.
- Still hot, pack the jelly in sterilized jars.
Mom Tips
The sweet spot: to check if the candy is ready, put a little of the syrup on a spoon and place it in the freezer for 30 seconds. If it stays consistent, it’s ready.
Do not let the jelly overcook, as the jelly can become sugary or even taste like burnt sugar, or have a “yummy” consistency, a bit like caramel.
Orange broth can be replaced with tangerine broth.
Serve the jelly with toast, meat, cheese, barbecue, etc.
