Cook the quinoa & lentil mixture as directed on the package directions.

Cut off the tops of the tomatoes and hollow out the insides with a spoon to empty them of their flesh. Take it out and cut it into small dice. Cut the green pepper into small pieces.

Remove the skin from the onion and chop it. In a frying pan, heat 2 tablespoons of olive oil, then brown the diced peppers with the diced tomato flesh and the onion.

Add the quinoa and lentil mixture to a bowl. Then, add the mixture of diced pepper, tomato flesh and onion. Add the chopped garlic, Provencal herbs, salt and pepper. Mix and preheat the oven to 180°C.

Stuff the tomatoes with the preparation.

Arrange the caps on top of the tomatoes and place them in an oiled baking dish. Drizzle the stuffed tomatoes with the remaining olive oil and bake for 30 minutes.
