Juan Arbelaez is one of those chefs who likes to share their know-how with thousands of French people. - Place the puff or shortcrust pastry rolled out into a rectangle on a baking tray lined with parchment paper. Prick it with a few swipes of a fork and fold the edges. Cook it for 10 minutes.
- Cut the cherry tomatoes into slices.
- For the tomato and onion compote, brown the chopped onion in a drizzle of olive oil. Add the large diced crushed tomato, then leave to stew for a few minutes. Remove from the heat, add the whole-grain mustard and thyme.
- Mix and scatter the tomato-onion compote over the precooked dough. Place the cherry tomato slices on top. Then, spread the shredded burrata on top.
- Bake everything for 15 minutes in an oven preheated to 180°C (Th.6). Divide the tomato tart into pieces and enjoy.
