How to Prepare Almond Paste

  1. Using a mixer, beat the butter, confectioners’ sugar and salt on low speed until well combined.
  2. Stop beating before the cream becomes aerated.
  3. Remove from the mixer, add the almond flour, add the egg and the essence.
  4. Mix well to incorporate the ingredients.
  5. Add the wheat flour to the mixture, stirring very well until you obtain a smooth dough.
  6. Refrigerate for at least 2 hours.
  7. Preheat the oven to 180ºC.
  8. Remove the dough from the refrigerator and place it between two sheets of plastic and roll it out to a thickness of 0.5 cm.
  9. Cut with a 5 cm cutter and bake for 25 minutes. Set aside.
