  • 4 tablets of fresh organic yeast
  • 200 grams of refined sugar
  • 8 sifted egg yolks or 5 beaten eggs
  • 150 grams of softened butter

  • 2 tablespoons orange flavoring
  • 1 tablespoon corn glucose
  • 2 glasses (American type) of warm milk
  • 1 tablespoon of powdered milk
  • 1 teaspoon of anti-mold (optional)
  • 1 tablespoon of liquid glycerin own for food
  • 1 tablespoon of emulsifier
  • 700 grams of wheat flour
  • 3 cups of milk chocolate chips

Dough preparation method (fresh yeast)

  1. Dissolve the yeast in the sugar.
  2. Add the eggs, butter, salt, orange zest, flavoring and glucose. Mix.
  3. Add powdered milk, anti-mold, glycerin, emulsifier and wheat flour.
  4. Add the milk little by little, mixing well until you obtain a soft dough.
  5. Knead the dough for 10 minutes.
  6. Add the chocolate drops.

Dough preparation method (dry yeast)

  1. Mix the dry yeast into the wheat flour. Reserve.
  2. In another bowl, mix the sugar, eggs, butter, salt, zest, flavoring, glucose, powdered milk, anti-mold, glycerin and emulsifier.
  3. Add the flour and yeast mixture and mix again.
  4. Add the milk little by little, until done.
  5. Knead for 10 minutes (by hand) or for 5 minutes (in a mixer).
  6. Add the chocolate drops.


  1. Fill the molds halfway with dough.
  2. Let it grow, until it double the volume.
  3. Preheat the oven to 180ºC.
  4. Bake for approximately 25 minutes or until slightly golden.
  5. Remove from the oven, cover with a clean, dry kitchen towel and let cool.
  6. When cold, melt the chocolate and cover the colombas.
  7. Decorate to taste, refrigerate until dry.
  8. Remove, let it rest overnight.
  9. Pack it.

Mom Tips

The ideal is to use fresh yeast.

Fresh yeast can be replaced with 20 grams of dry yeast.

The orange aroma can be replaced with panettone aroma to taste.
