Dough Ingredients

  • 500 grams of raw carrot
  • 1 cup (tea) wheat flour
  • 2 cups of sugar (tea)
  • 2 tablespoons of butter
  • 1 pinch of salt
  • 5 excited
  • 3 whites

Hazelnut Filling Ingredients

  • 1 cup (tea) chocolate and hazelnut cream like Nutella®
  • 2 tablespoons of chocolate powder
  • 2 tablespoons of sugar
  • 2 cups of milk (tea)
  • 3 tablespoons cornstarch (cornstarch)

Method of Preparation Filling and Covering

  1. In a pan, dissolve the cornstarch in the milk.
  2. Add the sugar, chocolate and heat over low heat, stirring constantly until it thickens.
  3. Remove and let cool.
  4. In a blender, beat this cream with Nutella® until you obtain a smooth cream.

Dough Preparation Method

  1. Grease and flour the pan.
  2. Preheat the oven.
  3. Beat the egg whites and set aside.
  4. In a blender, blend the carrots, flour, sugar, butter, salt and egg yolks.
  5. Transfer to a bowl and add the egg whites.
  6. Mix gently and place the dough in the pan.
  7. Bake for 30 minutes or until a toothpick inserted into the dough comes out dry.
  8. Unmold the still hot cake onto a damp napkin.
  9. Cover with the filling and roll up like a roulade.
  10. Place on a platter.
  11. Cut a slice and “stick” it to the side of the roulade, with a little of the filling, imitating log
  12. Cover the rest and make scratches imitating wood.
  13. Decorate to taste.

Mom Tips

Other fillings that can be used: Ganache, creamy brigadeiro or chocolate filling/topping of your choice.
