Entering the Panna Cotta

  • 300 ml fresh cream
  • 200 ml of milk
  • ½ vanilla bean
  • 5 grams of flavorless, colorless gelatin powder
  • 5 tablespoons of refined sugar

Pomegranate Coulis Ingredient

  • 2 large pomegranates
  • 3 tablespoons of sugar

Pomegranate Coulis Preparation Method

  1. In a pan, place the juice and pulp of a pomegranate and the sugar.
  2. Cook over low heat, stirring constantly until you get a thick jelly.

How to Prepare Panna Cotta

  1. Hydrate the gelatin with 2 tablespoons of water. Reserve.
  2. In a pan, place the cream, milk and sugar.
  3. Scrape the seeds from the vanilla bean and add it to the pan, along with half the bean.
  4. Heat until boiling and remove from heat.
  5. Remove the bean, add the hydrated gelatin and mix until the gelatin dissolves well.
  6. Distribute the mixture into jars and refrigerate.
  7. When serving, unmold and distribute the pomegranate coulis over the top.
  8. Decorate with pomegranate seeds.
