Anyone who thinks it is too sweet is wrong. Hmm… the brigadeiro version of churros is delicious!
Ingredients
- 1 can of condensed milk
- ½ tablespoon unsalted margarine
- Sugar to taste
- Cinnamon powder to taste
- Iced dulce de leche paste
- Paper molds
- Decorated cellophane rugs

Preparation Mode
- Mix sugar with cinnamon and set aside.
- In a pan, place the condensed milk and margarine.
- Cook over low heat, stirring constantly until the candy leaves the bottom of the pan.
- Remove, place in a deep plate and let it cool.
- Remove small portions of dough with the help of a teaspoon.
- Make a ball, open it in the palm of your hand and fill it with half a spoon (coffee) of dulce de leche.
- Close the ball, roll it up and roll it in cinnamon sugar.
- Place in a paper pan lined with a mat and let it dry for 8 hours.
- Using a piping bag and piping tip, decorate each brigadeiro with dulce de leche.
Mom Tips
The point of the brigadeiro: when the sweet thickens, tip the pan a little to see the bottom. If the sweet take off from the bottom, I said take off and do not run, the sweet is on point. If it runs, stir the jam a little more (about 4 or 5 turns with a wooden spoon) and tip the pan again until you see that the jam is coming away from the bottom of the pan. Be careful not to overdo it.
You can opt for the 2nd ingredient option: 1 can of condensed milk, 100 ml of whey-free cream and 10 grams of unsalted butter.
The legitimate churro brigadeiro is filled with or without decoration. This doesn’t stop you from choosing not to stuff or decorate.
To fill, you can replace the dulce de leche paste with dulce de leche bars cut into small pieces.
Small brigadeiros yield approximately 38 units.
Large brigadeiros yield approximately 18 units.
