Ingredients
- 2 kg of fresh asparagus
- 200 grams of butter
- 1 bunch of parsley
- 1 bunch of chives
- 3 boiled eggs
- 1 lemon juice
- Black pepper to taste
- Salt to taste
Preparation Mode
- Put a large pot of water on to boil.
- Clean the asparagus and scrape it, removing the fiber that surrounds it.
- Cut the bases to approximately 5 cm.
- Tie them into bundles.
- Place the bundles in the boiling water and let them cook until they are soft.
- Remove, drain and wrap the bundles in a clean cloth.
- After cleaning, finely chop the parsley and chives.
- You will get green smell.
- Chop the boiled eggs, once cold, into very small pieces.
- Gently mix the green chilli with the chopped eggs.
- Melt the butter in a bain-marie together with the lemon juice.
- Distribute the asparagus on a platter.
- Spray the asparagus with the egg mixture.
- Season the butter with salt and pepper.
- Drizzle the asparagus with the mixture.
- Serve while still hot.

You can choose to separate and not mix the eggs with the seasoning.
