Asparagus deserves to be highlighted on your menu because it is nutritious, low in calories and provides vitamins and fiber. Enjoy!


  • 2 kg of fresh asparagus
  • 200 grams of butter
  • 1 bunch of parsley
  • 1 bunch of chives
  • 3 boiled eggs
  • 1 lemon juice
  • Black pepper to taste
  • Salt to taste

Preparation Mode

  1. Put a large pot of water on to boil.
  2. Clean the asparagus and scrape it, removing the fiber that surrounds it.
  3. Cut the bases to approximately 5 cm.
  4. Tie them into bundles.
  5. Place the bundles in the boiling water and let them cook until they are soft.
  6. Remove, drain and wrap the bundles in a clean cloth.
  7. After cleaning, finely chop the parsley and chives.
  8. You will get green smell.
  9. Chop the boiled eggs, once cold, into very small pieces.
  10. Gently mix the green chilli with the chopped eggs.
  11. Melt the butter in a bain-marie together with the lemon juice.
  12. Distribute the asparagus on a platter.
  13. Spray the asparagus with the egg mixture.
  14. Season the butter with salt and pepper.
  15. Drizzle the asparagus with the mixture.
  16. Serve while still hot.

Mom Tips

You can choose to separate and not mix the eggs with the seasoning.
