Ingredients

  • 4 excited
  • 4 egg whites
  • 1 and ½ cup (tea) sugar
  • 1 cup (tea) butter
  • 200 grams of mashed ricotta
  • ½ cup chopped shelled almonds
  • 1 cup of candied fruit
  • 1/3 cup (tea) orange juice
  • 2 and ¼ cups (tea) of sifted wheat flour
  • 1 tablespoon of chemical baking powder
  • Icing sugar (optional)

Preparation Mode

  1. Prepare a 35 cm x 25 cm pan by greasing and flouring it.
  2. Preheat the oven to medium temperature.
  3. Mix the fruits and almonds with 2 tablespoons of wheat flour. Reserve.
  4. Using a mixer, beat the egg yolks with the sugar until they are fluffy and white.
  5. Add the butter, ricotta and beat for another 5 minutes.
  6. Add the remaining flour and juice, mixing until smooth.
  7. Add the beaten egg whites, yeast and mix gently.
  8. Pour the dough into the pan.
  9. Distribute the fruits on top.
  10. Bake for approximately 40 minutes.
  11. Remove and when warm, unmold.
  12. Sprinkle with icing sugar.
