Dough Ingredients

  • 7 tablespoons of sugar
  • 5 eggs
  • 11 tablespoons of wheat flour

Dough Preparation Method

  1. Prepare a tall, round, false-bottomed pan measuring 20 cm in diameter by simply greasing the pan. Reserve.
  2. Preheat the oven to 180ºC.
  3. Using a mixer, beat the eggs with the sugar until you obtain a whitish and very fluffy cream.
  4. Reduce the mixer speed well and add the wheat flour little by little.
  5. Place in the oven to bake for approximately 25 minutes.
  6. Remove and unmold while still hot.
  7. While it cools, prepare the fillings.

Baba de Moça Filling Ingredients

  • 9 egg yolks, sifted
  • 200 ml coconut milk
  • 2 cups of sugar (tea)

Preparation method for Baba de Moça filling

  1. Place all ingredients in a pan.
  2. Cook over low heat, stirring constantly, until creamy.
  3. Reserve.

Apricot Jam Filling Ingredients

  • 250 grams of apricots
  • 500 ml of water
  • 1 cup (tea) sugar

How to Prepare Apricot Jam Filling

  1. In a pan, bring the water and apricots to cook until they are soft.
  2. Remove the apricots and place them in the blender.
  3. Place the mixture in a pan with the sugar and heat over low heat, stirring constantly, until you get the jelly.
  4. Reserve.

Glass Cover Ingredients

  • 8 cups (tea) of water
  • 500 grams of sugar
  • 110 grams of unflavored gelatin powder
  • 1 box of gelatin with the flavor of your choice.

Glass Covering Preparation

  1. In a pan, bring five cups (tea) of water with sugar to a boil. Dissolving the sugar well, turn off the heat.
  2. Mix unflavored gelatin powder with flavored gelatin powder
  3. Add 3 cups (tea) of cold water to hydrate and mix.
  4. Once hydrated, place the mixture in the hot sugar syrup, mix so that the gelatin is well dissolved.
  5. Mix well.
  6. Place in a large jug and skim off any foam that may have formed in the jug.
  7. Refrigerate without letting it solidify.
  8. Meanwhile, assemble the cake.

Assembling the Glass Cake

  1. Divide the cake into four parts, obtaining 5 masses.
  2. Place the first dough on a Styrofoam cake base or cardboard plate.
  3. Fill with part of the girl’s drool.
  4. Place the second dough and fill with apricot jam.
  5. Repeat the operation until you run out of pasta and fillings.
  6. Decorating, cover the entire cake with whipped cream.
  7. Decorate with strawberries.
  8. Using scissors, cut off the excess of the cardboard plate (if you used this type of plate) very close to the side of the cake.
  9. The already prepared cake should fit in another pan (well greased with oil), a little larger than the pan in which the dough was baked. It should also have high edges.
  10. Place the prepared cake in another pan in the freezer so that it is well chilled. but not frozen.
  11. When it is well chilled, remove it and, with the help of a spoon, place approximately 2cm of gelatin in the mold between the cake and the mold.
  12. Place back in the freezer until the gelatin solidifies. This will seal the shape. Don’t let it freeze.
  13. Remove and add another 3 cm of gelatin again and place back in the freezer.
  14. When the gelatin is completely solidified, add the rest of the gelatin to completely cover the cake.
  15. Refrigerate the cake until the gelatin is completely solidified.
  16. Unmold the cake and serve.

Mom Tips

There is no yeast in the dough, so the eggs and sugar must be beaten well for at least 10 minutes.

In the cake in the photo, lemon flavored gelatin was used.

The whipped cream topping can be replaced with the condensed milk frosting recipe or another topping of your choice.
