A healthy recipe that provides calcium and also favors people with lactose intolerance. Enjoy! Corn cake for Festa Junina is also welcome all year round.

Ingredients

  • 2 cans of green corn, drained
  • 2 cups of soy milk
  • ½ can of condensed soy milk
  • 1 cup (tea) sugar
  • 1/3 cup (tea) oil
  • 3 eggs
  • 1 cup cornmeal (tea)
  • 1 cup (tea) wheat flour
  • 1 tablespoon of baking powder
  • Cinnamon powder to taste (optional)

Preparation Mode

  1. Grease and flour a small baking dish.
  2. Preheat the oven to 180ºC.
  3. In a blender, blend the corn, soy milk, condensed milk, sugar, oil and eggs.
  4. Pour the mixture into a bowl and add the cornmeal, flour and yeast.
  5. Mix well after each addition and transfer the mixture to the baking dish.
  6. Bake for approximately 30 minutes, or until a toothpick inserted into the dough comes out dry.
  7. Remove from the oven and sprinkle the cake with cinnamon.

Mom Tips

In good markets there are already soy milks with the same calcium content as animal milk.
