If you are looking for a comforting, classic and easy-to-make preparation for a snack, we reveal the recipe from the famous pastry chef Pierre Hermé. It’s a moist cake at an affordable price that we strongly recommend you try. Get to your stove!

For 4 people, you will need:

For the lemon cake maker, you will need:

  • 65 g cold melted butter
  • 1 large untreated lemon
  • 200g caster sugar
  • 3 eggs
  • 2 tablespoons of dark rum
  • 95 g of whole liquid cream
  • 190 g of flour
  • 1/2 teaspoon baking powder
  • 1 pinch of salt

For the soaking syrup you will need:

  • 75 g of mineral water
  • 30 g of powdered sugar
  • 1 tablespoon of lemon juice
  1. Start by melting the butter. Then, book.
  2. Then zest the lemon and mix with the powdered sugar.
  3. Preheat your oven to thermostat 5 to 150°C, fan-forced heat. Grease a 20cm long cake tin.
  4. In the bowl of a food processor, break the whole eggs and add the sugar flavored with the lemon. Whisk until the mixture whitens. Add the rum, whole cream and salt. Then whisk again. Sift the flour with the yeast. Gradually incorporate everything into the previous mixture. Mix gently using a spatula.
  5. Add the cooled melted butter. Stir gently. Pour the batter into the mold. Bake for around 40 minutes. The cake will be cooked when you can insert your knife and the blade comes out completely dry.
  6. Once it is ready, unmold the cake.
  7. While the cake is baking, prepare the soaking syrup. To do this, boil the water and sugar. Remove from the heat and add the lemon juice. Mix. Before the cake cools, place it on a rack and pour all of the syrup over the cake.
  8. Let everything cool to room temperature.
