And as surprising as it may seem, Philippe Etchebest admitted that his worst memory was when he opened his first restaurant: “Maybe it was the day I opened my restaurant. I was very afraid. It’s a bit of a weird feeling. It was the first time. It was my first business. And I wasn’t proud actually. I was very stressed”. Finally, despite a big leap into the unknown, the chef assures us: “That went really well.”

Today, the chef is at the head of several restaurants.
