Ingredients

  • 3 cups of fresh cream
  • 7 tablespoons icing sugar
  • 6 beaten egg yolks
  • Juice of 2 lemons
  • 2 tablespoons lemon zest
  • ½ teaspoon vanilla essence
  • 3 tablespoons icing sugar for sprinkling

Preparation Mode

  1. Preheat the oven to medium temperature.
  2. In a pan, place the cream and icing sugar.
  3. Bring to a boil, stirring with a whisk.
  4. In a bowl, add a little of this cream along with the egg yolks.
  5. Mix and return everything to the pan.
  6. Add, mixing to avoid curdling, the lemon juice, zest and vanilla.
  7. Pass everything through a sieve and distribute into refractory jars.
  8. Bake in the oven in a bain-marie for approximately 1 hour and 30 minutes or until the edges are firm and the center is soft.
  9. Remove and once cold, refrigerate.
  10. It must freeze for at least 6 hours.
  11. Remove and sprinkle with icing sugar.
  12. Burn with the culinary torch.
  13. Decorate to taste and serve.

Mom Tips

You can find it in good supermarkets, on refrigerated shelves, fresh milk cream sold in 500-gram plastic bottles. It is also found in 1-liter long-life boxes. There are brands such as Vigor, Tirolez, Leco, etc.

If you don’t have a torch, make a caramel sauce and spread a thin layer over the cream.
