Mom Tips

The white chocolate for the topping can be fractionated. For the dough of any truffle, noble chocolate is always recommended.

Water bath or microwave to melt the chocolate? The answer is the double boiler. It’s very easy to burn chocolate in the microwave.

Do not let the water in the water bath boil.

The truffles can be completely white, decorated with mint leaves and served in paper cups.
