  2. Add the cream, liqueur, essence and mix well.
  3. Refrigerate for 30 minutes.
  4. Remove, make balls and place them on baking paper on a platter.
  5. Place back in the fridge for at least 30 minutes.
  6. Melt the chocolate for the topping in a bain-marie.
  7. Then give it a cold water bath, stirring gently until you get a shiny, cold mass that touches your lips.
  8. Dip the balls in the melted chocolate and place on a sheet of baking paper.
  9. Let it dry for at least 30 minutes if you want to wrap the truffles.
  10. Placing the truffles in paper molds, decorate them with milk chocolate.

The white chocolate for the topping can be fractionated. For the dough of any truffle, noble chocolate is always recommended.
