Ingredients
- 4 cups of rigatoni cooked “al dente”
- 1 yellow pepper cut into cubes
- 1 red pepper cut into cubes
- 1 onion, diced
- 2 eggplants cut into cubes
- 3 envelopes of vegetable broth powder
- 2 tablespoons of olive oil
Sauce Ingredients
- 1 box of tomato pulp
- 2 envelopes of vegetable broth powder
- 2 grated onions
- 2 cloves of minced garlic
- 2 tablespoons of olive oil
- 100 grams of grated mozzarella
Preparation Mode
- On a baking sheet, place the eggplants, peppers and onions.
- Season with vegetable stock and drizzle with olive oil.
- Bake at high temperature for approximately 20 minutes.
- Stir from time to time.
Sauce Preparation Method
- In a pan, add the olive oil and sauté the onion and garlic.
- Add the tomato pulp and vegetable broth.
- Let it boil.
- In a baking dish, place the vegetables, the already cooked rigatoni, the sauce and the mozzarella.
- Place in the oven to brown for approximately 20 minutes.
