A rich and flavorful Rigatoni dish that cannot be missed on your menu!


  • 4 cups of rigatoni cooked “al dente”
  • 1 yellow pepper cut into cubes
  • 1 red pepper cut into cubes
  • 1 onion, diced
  • 2 eggplants cut into cubes
  • 3 envelopes of vegetable broth powder
  • 2 tablespoons of olive oil

Sauce Ingredients

  • 1 box of tomato pulp
  • 2 envelopes of vegetable broth powder
  • 2 grated onions
  • 2 cloves of minced garlic
  • 2 tablespoons of olive oil
  • 100 grams of grated mozzarella

Preparation Mode

  1. On a baking sheet, place the eggplants, peppers and onions.
  2. Season with vegetable stock and drizzle with olive oil.
  3. Bake at high temperature for approximately 20 minutes.
  4. Stir from time to time.

Sauce Preparation Method

  1. In a pan, add the olive oil and sauté the onion and garlic.
  2. Add the tomato pulp and vegetable broth.
  3. Let it boil.
  4. In a baking dish, place the vegetables, the already cooked rigatoni, the sauce and the mozzarella.
  5. Place in the oven to brown for approximately 20 minutes.

Mom Tips

You can replace the peppers with other vegetables of your choice.
