Surprise everyone on special occasions with this delicious and delicious party rice! Excellent for Easter and Holy Week, Christmas and New Year and special festivities in general.

Ingredients

  • 2 cups (tea) of washed and drained rice
  • 1 tablespoon of oil
  • 1 tablespoon of butter
  • 2 crushed garlic cloves
  • Black pepper to taste
  • Salt to taste
  • 1 and ½ cups (tea) of boiling water
  • 1 cup (tea) of dry white sparkling wine
  • ½ cup (tea) of chopped apricots
  • ½ cup (tea) of dark raisins
  • ½ cup (tea) of white raisins
  • ½ cup (tea) of roasted and chopped cashew nuts

Preparation Mode

  1. In a pan, over medium heat, melt the butter and oil.
  2. Add the garlic and fry until lightly golden.
  3. Add the rice and fry for 2 minutes.
  4. Add the boiling water, sparkling wine, pepper and salt.
  5. Cook over low heat, with the pan half covered, for 15 minutes.
  6. Add the apricots, raisins and cover.
  7. Cook for 5 minutes or until the water has completely evaporated and the rice is soft.
  8. Let it rest for 10 minutes covered.
  9. Fluff the rice with a fork.
  10. Transfer to a round bowl and press the rice using a slotted spoon.
  11. Unmold and decorate as desired.

Mom’s Tips

If you prefer, sprinkle the rice with chestnuts when serving.

Yields approximately 6 servings.
