Ingredients
- 1 kg boneless, skinless chicken breast, cubed
- 1 tablespoon of oil
- 1 grated onion, sliced or diced
- 2 cups diced ripe pumpkin
- 1 cube of chicken broth
- 2 cups of hot water
- Green chives or chives to taste
- Black pepper to taste
- Salt to taste
- 1 cup cream cheese (optional)
Preparation Mode
- Dissolve the chicken broth in the water and set aside.
- Heat a pan with oil over high heat and gradually brown the chicken.
- Add the onion and sauté for another 3 minutes.
- Add the pumpkin and dissolved chicken broth.
- Season with salt and pepper.
- Cover the pan, cook for 20 minutes over low heat, stirring occasionally.
- When the pumpkin is soft and the broth has reduced; will be ready.
- Add the cream cheese by spoonfuls and sprinkle with the green scent.
- Cover for 2 minutes and then serve.
Mom Tips
Use neck pumpkin. If you prefer, increase the amount of pumpkin.
Chicken breast can be replaced with thigh and drumstick.
