How about an appetizer, some moist Italian bread, for that perfect dinner? Very tasty!

Ingredients

  • 450 grams of wheat flour
  • 2 teaspoons of salt
  • 1 tablespoon of dry yeast
  • ¼ teaspoon black pepper
  • 90 ml of olive oil
  • Leaves from 6 rosemary sprigs
  • Big Sal

Preparation Mode

  • Prepare a shallow baking dish measuring 38 cm x 23 cm, brushing it with plenty of olive oil. Reserve.
  • Reserve 1/3 of the rosemary.
  • Chop the rest finely. Reserve.
  • Prepare 250 ml of warm water. Reserve.
  • Place the yeast in a small bowl with 4 tablespoons of warm water.
  • Stir until dissolved.
  • In a large bowl, add 425 grams of flour and salt and mix well.
  • Make a well in the center, add the warm water, olive oil, rosemary, pepper and yeast.
  • Mix everything with your fingertips until you get a smooth, soft, uniform and slightly sticky dough.
  • With the rest of the flour, flour your hands and knead the dough for approximately 7 minutes, until you obtain a soft and elastic dough.
  • Form the dough into a ball and place it in a bowl greased with olive oil, rolling the dough around the bowl so that the dough is greased.
  • Cover with a damp kitchen towel and let rise until doubled in size.
  • Remove and, on a lightly floured surface, place the dough and press it to remove the air.
  • Cover with a dry cloth and let it rest for another 5 minutes.
  • Place the dough in the pan and spread it to distribute it evenly.
  • Cover with a cloth again and let it rise for 40 minutes.
  • Preheat the oven to 200ºC.
  • Spread the reserved rosemary over the dough.
  • Press the entire dough with your fingertip to form depressions.
  • Pour the remaining olive oil over the dough and sprinkle the dough with coarse salt.
  • Bake on the top rack of the oven for approximately 20 minutes or until golden.
  • Remove and transfer to a grill.

Mom Tips

Dry yeast can be replaced with 20 grams of fresh organic yeast.

The ideal is to use freshly ground black pepper.

Dough: it should be slightly sticky, so resist and do not add more wheat flour so that you can obtain a moist bread after baking.

You could also try swapping the pepper and rosemary for 5 chopped sage leaves (discard the sage stems). Do not add more than recommended so that the flavor does not become too strong.
