Ingredients
- 175 grams of demerara sugar.
- 175 grams unsalted butter at room temperature
- 250 grams of sifted wheat flour
- 3 tablespoons of milk
- 3 large eggs
- 1 tablespoon of baking powder
- White and black raisins
- Candied lemon and orange peel
- Cherries
Preparation Mode
- Grease a 20cm round pan or English cake pan and line it with baking paper.
- Preheat the oven to 180ºC.
- Using a mixer, beat the sugar and butter until you get a light, fluffy and creamy mixture.
- Add the eggs, one at a time, adding a little flour after each addition.
- Next, add the milk, the rest of the wheat flour and the yeast.
- Add the fruits and mix.
- Place the dough in the pan and bake for approximately 1h30. Do the toothpick test.
- Leave the cake in the pan until it cools completely.
- Unmold.
- Remove the baking paper.
- Place the cake on a platter, cover with royal icing and decorate with fruit.
Mom Tips
Demerara sugar contains no additives and has light brown grains and has high nutritional values. A sugar that does not alter the flavor or color of preparations. It is found together with oat flour in natural product stores/houses, in good supermarkets or culinary product stores/confectionery stores.
