  • 175 grams of demerara sugar.
  • 175 grams unsalted butter at room temperature
  • 250 grams of sifted wheat flour
  • 3 tablespoons of milk
  • 3 large eggs
  • 1 tablespoon of baking powder
  • White and black raisins
  • Candied lemon and orange peel
  • Cherries

Preparation Mode

  1. Grease a 20cm round pan or English cake pan and line it with baking paper.
  2. Preheat the oven to 180ºC.
  3. Using a mixer, beat the sugar and butter until you get a light, fluffy and creamy mixture.
  4. Add the eggs, one at a time, adding a little flour after each addition.
  5. Next, add the milk, the rest of the wheat flour and the yeast.
  6. Add the fruits and mix.
  7. Place the dough in the pan and bake for approximately 1h30. Do the toothpick test.
  8. Leave the cake in the pan until it cools completely.
  9. Unmold.
  10. Remove the baking paper.
  11. Place the cake on a platter, cover with royal icing and decorate with fruit.

Mom Tips

Demerara sugar contains no additives and has light brown grains and has high nutritional values. A sugar that does not alter the flavor or color of preparations. It is found together with oat flour in natural product stores/houses, in good supermarkets or culinary product stores/confectionery stores.
