Take advantage of the nutritional properties of spinach and make a rich and very tasty soufflé!


  • ½ bunch of spinach
  • 1 cube of vegetable broth
  • 300 ml boiling milk
  • 1 tablespoon butter at room temperature
  • 2 tablespoons of wheat flour
  • Nutmeg to taste
  • Black pepper to taste
  • Salt to taste
  • 2 egg whites
  • 2 excited
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon of curd
  • Grated parmesan cheese for sprinkling

Preparation Mode

  1. Grease a baking dish with margarine and sprinkle with grated cheese. Reserve.
  2. Cook the spinach with the vegetable broth.
  3. Drain well, chop finely and set aside.
  4. Preheat the oven to 200ºC.
  5. In a bowl, mix the milk, butter and flour.
  6. Stir well until you obtain a white cream.
  7. Place in a blender, season with nutmeg, pepper, salt and blend well.
  8. Place the mixture in a pan and heat until it starts to boil.
  9. Turn off the heat and add the spinach, egg yolks, cream cheese and cheese.
  10. Add the egg whites and mix.
  11. Place the mixture in the ovenproof dish and bake for approximately 30 minutes.
