It’s not a simple strawberry cake. Refreshing and delicious, this cake is different and ideal for hot days. Delicious!
Meringue Ingredients
- 3 and ½ cups (tea) of sugar
- 6 egg whites
Garnish Ingredients
- 700 grams of sanitized strawberries
- Cream or vanilla ice cream
- 5 tablespoons icing sugar
Whipped cream ingredients
- ½ liter of fresh cream
- 2 tablespoons of sugar
- Vanilla sugar
Whipped cream preparation method
- Using a mixer, beat the cream with the sugar and vanilla sugar.
- Reserve in the refrigerator.
Preparation Mode
- Grease and flour a large baking tray/baking tray.
- Beat the egg whites, add the sugar and beat until it reaches a very firm consistency.
- Using a pastry tip, make two discs with the meringue dough.
- Start with a point in the center and work the dough in a spiral around that point until it is approximately the size of a plate.
- Sprinkle with icing sugar and bake gently.
- Open the oven door slightly and place the handle of a wooden spoon so that the temperature inside the oven does not rise too much.
- Leave it in the oven for about 1 hour.
- Once cold, cut the edges of the meringue discs, leaving them even.
- Reserve the leftovers, grinding coarsely.
- Place one of the discs on a pie plate and secure a 4 to 5 cm strip of cardboard around it.
- Spread a layer of ice cream measuring approximately 2 cm over the meringue.
- Distribute a layer of whole strawberries on top.
- Top with another layer of ice cream.
- Place in the freezer.
- Cover the second disc with a layer of whipped cream measuring approximately 1 cm.
- Decorate with whole strawberries.
- Place this disc over the pie, being careful to check that it is very hard.
- Remove the cardboard strip.
- Decorate the cake with whipped cream, strawberries and put it back in the fridge.
- Serve very cold.
Mom Tips
If you prefer, decorate the side of the cake with whipped cream and the leftover meringue.
